Garlic Java Rubbed Beef Tenderloin

Serves 4

1 ½# Beef Tenderloin, trimmed

4 ounces Garlic Olive Oil from two olive trees

1 package Java Steak Rub from two olive trees

Salt & Pepper to taste

 

Instruction:

Place tenderloin on a platter and rub the Garlic Olive Oil all over the meat, coating all sides. Coat tenderloin with the java steak rub generously on all sides and ends. Let rest for a half hour at room temperature. Heat a non- stick skillet/pan to high heat, place tenderloin in pan to sear beef on all sides and ends. Remove from pan and place a rack on a sheet pan, place tenderloin on rack and place in an oven at 350 degrees. Cook tenderloin until desired doneness. For medium rare take out of oven when a thermometer inserted into the thickest part of the meat reaches 130 - 135 degrees. Remember the tenderloin will continue to cook after you remove it from the oven. Let the beef rest for ten minutes before carving.

You can also do this on your outside BBQ grill by searing the meat over your burners on high heat and then placing the tenderloin on the other side of the grill with non-lit burners for indirect heat cooking.
