Trio Bruschetta

Two Olive Trees

Bruschetta (bruce kay tuh)

3 Ripe Tomatoes - diced

½ cup Onion - diced

1 clove garlic - minced

4 leaves fresh basil – chopped

¼ cup Fresh Ultra-Premium Olive Oil from Two Olive Trees

Sea Salt to taste

Grilled Bread

Instructions; Grill or toast bread, combine tomato, onion, garlic, basil, salt & olive oil. Serve on grilled bread.

Olive & Caper Tapenade Bruschetta (bruce kay tuh)

Pitted Kalamata Olives – chopped – ½ cup

Capers, rinsed and drained then roughly chopped – ¼ cup

Minced Cheese (Feta or Goat) – 1/3 cup

Garlic Infused Olive Oil from two olive trees – 2 teaspoons

Grilled Bread

Instructions; Grill or toast bread, combine olives, capers, garlic olive oil and cheese place on top of bread.

Mushroom Bruschetta (Italian Name) Bruschetta al Funghi

4 large slices of Country Italian bread from Two Olive Trees

3 medium garlic cloves

14oz fresh mushrooms (your choice)

2 T + Ultra-Premium Extra Virgin Olive Oil from Two Olive Trees

1 T chopped Thyme

2 T Denissimo Balsamic from Two Olive Trees

2oz fresh fennel chopped (save fronds for garnish)

Instructions:

Charbroil or toast the bread until it is crisp. Cut 1 garlic clove and rub cut edge over each bread slice. Drizzle EVOO over each bread slice. Heat EVOO in large fry pan over high heat. Add fennel, sauté till soft 3 minutes. Add mushrooms, sauté stirring frequently until mushrooms are tender and liquid has evaporated. Season with salt & pepper. Add chopped garlic and thyme and cook one more minute. Take off heat and drizzle with Denissimo Balsamic. Spoon over bread slices and serve.
