Two Olive Trees
Rosemary Skewered Chicken Kabobs Appetizer
Serves 8-12 people
Ingredients:
2 pounds boneless skinless chicken breast cubed
½ cup Milanese Gremolata Ultra-Premium Olive Oil from two olive trees
12 Grape Tomatoes
Fresh Mozzarella Cheese
8-12 sturdy rosemary branches for skewers
2 tablespoons freshly chopped rosemary
2 tablespoons TOP secret seasoning from two olive trees
Instructions:
Place chicken, tomato, oil, chopped rosemary and Top secret seasoning in a zip lock bag and marinate for 1 hour (refrigerated). Remove rosemary from branches and soak in water for 30 minutes. Use branches as skewers for chicken, tomato rotating. Rub grill grates with olive oil using a paper towel, heat grill. Place kabobs on grill let cook on each side approximately 3 minutes each side until an instant read thermometer inserted into chicken reads 165 degrees F. Take off heat and add fresh mozzarella on to skewer.
