DOLCETTO D'ALBA DOC 100% Dolcetto from subzone known as Buschet meaning "little woods" located inside the Cars vineyard within the village of Barbaresco. Harvest is early September to capture the balance of perfectly ripened fruit and bright acidity. Grapes are destemmed and pressed gently to ensure preservation of aromatics and slow extraction of color. Fermented under temperature control and daily pumpover, the wine spends 7-10 days on the skins and then completes malolactic fermentation in stainless steel tanks. Brilliant purple with a bouguet boasting dusty plum, blueberry preserves and dried violets. Dry & medium bodied, soft tannins give way to a fresh finish. Lovely red for first courses, including salumi & cheeses. Serve with a slight chill.
